Kangaroo Stir-Fry

Ingredients

For the Stir-Fry

  • 500g kangaroo steak, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup snow peas
  • 2 tablespoons vegetable oil
  • Sesame seeds (for garnish)
  • Fresh cilantro or green onions (for garnish)

For the Marinade

  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon Vegemite (adjust to taste)

For the Rice

  • 1 cup white rice
  • 2 cups water
  • A pinch of salt

Instructions

Preparing the Rice

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice, water, and a pinch of salt.
  3. Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes or until the water is absorbed and the rice is tender.
  4. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

Preparing the Marinade

  1. In a bowl, combine the soy sauce, honey, grated ginger, minced garlic, sesame oil, black pepper, and Vegemite. Stir until the Vegemite is fully dissolved.
  2. Add the kangaroo steak slices to the marinade. Ensure each piece is well coated. Cover and refrigerate for at least 30 minutes.

Cooking the Stir-Fry

  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the bell peppers, onion, and snow peas. Stir-fry for 3-4 minutes until just tender. Remove and set aside.
  2. In the same skillet, add the remaining tablespoon of oil. Add the garlic and marinated kangaroo (discard the remaining marinade). Stir-fry for 2-3 minutes or until the kangaroo is cooked to your preference.
  3. Return the cooked vegetables to the skillet with the kangaroo. Toss to combine and heat through for another minute.

Serving

  1. Serve the kangaroo stir-fry over the cooked white rice.
  2. Garnish with sesame seeds and fresh cilantro or green onions.
