Ingredients
For the Stir-Fry
- 500g kangaroo steak, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup snow peas
- 2 tablespoons vegetable oil
- Sesame seeds (for garnish)
- Fresh cilantro or green onions (for garnish)
For the Marinade
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1 tablespoon sesame oil
- 1 teaspoon Vegemite (adjust to taste)
For the Rice
- 1 cup white rice
- 2 cups water
- A pinch of salt
Instructions
Preparing the Rice
- Rinse the rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice, water, and a pinch of salt.
- Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes or until the water is absorbed and the rice is tender.
- Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
Preparing the Marinade
- In a bowl, combine the soy sauce, honey, grated ginger, minced garlic, sesame oil, black pepper, and Vegemite. Stir until the Vegemite is fully dissolved.
- Add the kangaroo steak slices to the marinade. Ensure each piece is well coated. Cover and refrigerate for at least 30 minutes.
Cooking the Stir-Fry
- Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the bell peppers, onion, and snow peas. Stir-fry for 3-4 minutes until just tender. Remove and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the garlic and marinated kangaroo (discard the remaining marinade). Stir-fry for 2-3 minutes or until the kangaroo is cooked to your preference.
- Return the cooked vegetables to the skillet with the kangaroo. Toss to combine and heat through for another minute.
Serving
- Serve the kangaroo stir-fry over the cooked white rice.
- Garnish with sesame seeds and fresh cilantro or green onions.
